You decide when the charge happens
At booking time, the player's card isn't charged: the amount is simply authorized. The charge is then collected automatically a few hours before the match, and you decide that delay. As long as the charge hasn't happened, the player can cancel on their own and the authorization is released. Once the amount is collected, cancellation is no longer possible on their side: the spot is paid for, and it's up to you what you do with it.
